How to Zest a Lime With a Zester

Overview
Lime zest is the thin outer green peel of the lime that contains the majority of the fruit's flavorful oils. Both sweet and savory dishes often call for lime zest to add a tangier, more refreshing taste than the juice alone. A thick white substance known as the pith is located just below the lime peel and adds an unpleasant, bitter taste. A zester is a sharp metal tool that precisely separates the peel and the pith. If you don't use it properly, you can end up with the pith or even risk minor injury.

Step 1
Rinse your lime under cool water and rub it lightly to remove any waxy buildup or grime. Pat the lime dry with a clean cloth.

Grip the zester firmly by the handle and position the metal end horizontally against the center of the lime. Drag it gently width-wise around the circumference of the lime so that very thin shreds of green peel come off.

Turn your zester around so you can view the back of the metal part. Use your finger to carefully wipe off any zest that is stuck to the back so it doesn't build up.

Repeat the dragging process around the lime until little to no green peel is visible. Inspect your zest to ensure you didn't remove any of the white pith along with the peel. Remove and discard any pith you find.

Use the lime zest immediately for the best results. Keep the peeled lime on hand and use its juice for flavoring dressings, sauces or marinades. (Since it's missing the peel, the lime may not be visually appealing enough to serve in wedges.)
