1. Add the tea leaves to the pot (one teaspoon per cup, plus one for the pot).

2. Use COLD water to boil - the purer the better.


3. Immediately pour the just boiled water over the loose leaves.
4. Cover the pot.

5. Steep three to five minutes for most teas; longer, to taste, for the more delicate green and herbal infusions. When ready to serve, pour the tea through the strainer into individual cups.

6. Remember: DO NOT add milk in herbal, green, or anything citrus-y (in fact, only put it in English/Irish Breakfast, Earl Grey or similar flavors). It will taste awful. They can use honey (or sugar) and/or lemon. Green tea is served without anything at all. Well, except for the cup.
