How to Make Cantonese Crispy Baked Chicken

Cantonese Crispy Baked Chicken doesn't have to come from a Chinese restaurant. You can make it at home in your own kitchen. The recipe may seem complicated at first, but the steps are simple. All it really takes is time and patience. You need to plan to prepare this dish several days in advance as part of the process involves leaving the chicken in the refrigerator. This time in the refrigerator is what makes the skin crispy.

Step 1
Rinse chicken and pat dry with paper towels.

Peel the ginger root and dice well.

Mix the ginger root, five spice powder, onion, star anise, black bean sauce and orange peel.

Place the mixture in the chicken cavity and tie the legs together with twine.

Mix the baking soda and water together. Hold the chicken over the sink and pour mixture over the chicken.

Place the chicken on the wire rack and place the wire rack over the roasting pan. Place in the refrigerator. It is important for air to be able to circulate all around the chicken so a wire rack is best.

Mix together the honey and vinegar.

Brush the chicken with the honey mixture. Do this twice a day for three days.

Drain any liquid in the roasting pan and then bake the chicken at 325 degrees F for 1 1/2 to 2 hours or until the internal temperature reaches 170 degrees F.
