How to Freeze Cherry Juice

Overview
Cherries may be best known for being pitted and eaten whole or in desserts, but they also produce a tart juice that can be drunk as a beverage. Cherry juice is not as widely consumed as other fruit juices; if you purchase large amounts of commercial cherry juice or simply squeeze your own, you may want to store it long-term since it can be difficult to find. Freezing works well for preserving cherry juice because the flavor is so intense, it won't become bland after being frozen.

Step 1
Store cherry juice in your refrigerator until you are ready to package it for freezing. Ensure that the juice is chilled before handling it because room temperature juice may not freeze as evenly and could create excessive ice crystals.
-
Step 2
Pour the chilled cherry juice carefully into an airtight container or quart-size freezer storage bag. Leave at least a half inch of space between the juice and the top of the container or bag because the juice will expand as it freezes and requires the extra room to freeze evenly.
-
Step 3
Squeeze out any excess air if you're using a freezer bag and close the bag securely, or place a lid onto your airtight container. Place the cherry juice into your freezer. If you're using a freezer bag, lay it flat into your freezer so the cherry juice spreads out evenly while it freezes.
-
Step 4
Store the cherry juice in your freezer for up to six months. Remove the container or bag from your freezer and thaw it in your refrigerator before consuming.

- If you plan on thawing only small portions of cherry juice at a time, you can pour the juice into an ice cube tray and freeze it, then transfer the cherry-juice cubes into one freezer storage bag. Each juice cube will be approximately one tablespoon.
Add half a tablespoon or so of sugar into the cherry juice before freezing if you want a sweetened version.

- Do not use a glass jar to freeze cherry juice; the cold temperatures can put too much pressure on the glass and make it shatter.
