How to Cook 'Chicken' for Vegans

    If you like chicken, but you or your guests are vegans, you can substitute with "veggie chicken." It tastes the same as chicken and is easily available in food shops, and you can purchase it online. Veggie chicken, a soy product, is rich in protein and fiber. Compared to regular chicken, it is also lower in fat content.
 
  • Step 1

    Combine flour, tapioca and vegetable broth in a medium bowl.
  • Step 2

    in the slow cooker, add broth mixture, artichokes, mushrooms, onion, tomatoes and olives.
  • Step 3

    Add the curry powder, veggie chicken, salt, pepper and thyme to the broth mix.
  • Step 4

    Cook covered for 7 to 8 hours on low or for 3 1/2 to 4 hours on high.
  • Step 5

    Serve hot with rice or bread.
