by Whitney Elaine
-
Sanitize all of your tools by soaking them in warm soapy water. Rinse well, then add a tablespoon of bleach to a gallon of water and let the tools soak in that mixture. Rinse well and be sure to remove all traces of bleach.
-
Pour 2.7 gallons of cold water into your 10-gallon bin. Boil 7 1/2 quarts of water in the 22-quart pot.
-
Add the can of malt extract to the pot of boiling water and stir for 20 minutes. Do not cover the pot.
-
Add the corn syrup and grated carrots to the boiling mixture until the ingredients dissolve.
-
Pour the boiling mixture into the pail of cold water as soon as the syrup dissolves.
-
Step 6
Use the 2-liter bottles to add cold water to the pail until the mixture has cooled. Use the thermometer to check when the mixture has reached 68 degrees Fahrenheit.
-
Step 7
Add the yeast and stir. Tightly cover the pail with the appropriate lid.
Fermenting and Bottling
-
Keep the mixture in the pail and covered for six days.
-
Dip a hydrometer into the pail to determine if the beer is ready. Light beers will be will read between 1.010 and 1.015, while darker beers will ready around 1.008.
-
Move your beer pail to a steady table and cover the floor around the table with old newspapers. Arrange the 2-liter bottles on the floor and funnel two tablespoons of white sugar into each bottle.
-
Attach the hose clamp to the vinyl tube before putting the tube into the pail. Siphon beer from the pail into the bottles, using the hose clamp and vinyl tube. Do not fill bottle to the top, but leave a little space for air in the bottle.
-
Cap each bottle and shake to dissolve the sugar into the beer. Store the bottles in a dark room for four days before drinking.
